Hoi An, Vietnam - Top Ten

Hoi An

If you fancy upgrading your wardrobe with shiny new threads, Hoi An is the place. Every other shop in this small, perfectly formed central Vietnamese town belongs to a tailor who will happily whip up a pair of slinky pyjamas or a silk kimono ('made-to-measure, Visa or Mastercard'). It will be made from the fruit of locally bred silkworms and, with luck, will fit perfectly and carry no size tag.

This fashion hub and Unesco World Heritage Site has long been a class act. In the 16th and 17th centuries, it was an international port called Faifo swarming with Chinese and Japanese merchants. Today, the exotic trader influence shines through in the shrines, silk shops, bridges and quaint tile-roofed wooden houses.

Because many of the downtown streets are closed to cars and even motorcycles on some days, they are great for a wander. Although most shops target tourists, unusually for Vietnam, much of the town has been conserved. A heritage time capsule, this living museum of Vietnamese culture offers visitors the tranquility many need as an antidote to the mania of the country's cities, and from their lives back home.

The limited development that has been allowed has unfolded sympathetically, resulting in a minimum of tower blocks and karaoke parlours and a general lack of tat and tack. It feels "boutiquey" rather than "souveniry", to echo one observer.

When you tire of the lanterns, kites and looms, there is no need to pack up and leave. Just beyond the fringes of this most picturesque of towns, you will find plenty of momentous attractions, if little in the way of golf, although the area has five world-class courses in the pipeline.

Tempted? Hoi An is just down the road and is far quieter than Hanoi. Instead of honking horns and revving motorbikes, the prevalent sounds are whirring sewing machines, clinking chisels and softly shuffling flip-flops topped by sibilantly humming voices.

Give in to the temptation to fall into a trance, but try to snap out of it when you take a taxi, as you are still in the most commercial of countries. Confirm the cost and destination. Otherwise, expect to arrive at the wrong hotel, to be charged way too much and then to be stung for extras, such as for having too many shopping bags or for any other reason your driver can concoct, such as being a large person, or your belt causing wear-and-tear on the upholstery.

Finally, ensure you have plenty of traveller's cheques or stacks of cash. The reason: as in much of Vietnam, the ATMs have the distressingly capricious habit of, like casino one arm bandits, dispensing cash at random intervals or not at all.

For wireless internet access on what some Vietnamese call your 'toplap', try the Hai Scout cafe at 111 Tran Phu Street. Alternatively, try another old quarter stalwart, the chic and bare-bones Art Cafe at 30 Thai Hoc Street, which is a good place to relax and soak up Hoi An's ample atmosphere. "It nice," as the sign says.

Simon Ramsden lists the top ten attractions in or near a town with four UNESCO World Heritage sites within easy reach:

1. Japanese Covered Bridge
Surprisingly short and stocky, Hoi An's most famous landmark has a tall story behind it. The story begins with a monster called Cu, which was so big it had its head in India and its tail in Japan. The products of its nether regions, which are situated over Vietnam, have been credited with most of what is good, and bad, in the country's history.

In the 1590s a covered bridge was built in Hoi An to link the Japanese side of town with the Chinese quarter. According to the story, because the bridge spanned the weakest part of the monster, the pressure killed it. Hence the shrine of atonement halfway across.

As if that legend were not odd enough, one entrance is guarded by a pair of monkeys and the other by a pair of dogs.

2. Hoi An Harbour
To see the harbour at its most magical, rise at daybreak and go to the bridge. A guide will take you out on a wood-boards-and-peeling-paint ferry for a fresh, laid-back take on the town. Bobbing and lolling around, you may feel that you have stepped back in time to the age of Marco Polo.

3. Tran Family Worship House
Ringed by a garden and high fences, the Old Town house could more accurately be described by a bourgeois word you are still not meant to use. Infused by Chinese and Japanese influences, the temple, sorry house, was constructed by a mandarin named Tran Tu Nhac.

Intriguingly designed, it splits into the main worship part and an annex for family and guests. The worship hall has three doors, each for a different type of visitor.

The left door is for men, the right for women. The middle door, for the grandparents, is opened during the Tet new year festival and on other celebratory days. If the place feels too rigid for your taste, try Phuc Kien Pagoda - the assembly hall-cum-temple for Chinese from the Fujian province who worship the Fujian god Tien Hau.

4. Cargo Club Restaurant and Patisserie
One of the joys of Hoi An is the eccentric English displayed on menus. Think "grilled tofu with grass" and "banana pancake with bile honey".

Set in an ancient, two-storey shophouse on one of Hoi An's liveliest streets, the Cargo Club at 107-109 Nguyen Thai Hoc Street serves up a few linguistic oddities of its own, including 'alsatian baguette'.

Nonetheless, the food is reliably delicious and diverse. The repertoire includes everything from spicy seafood noodle soup to roasted fennel and goat cheese salad. Adding to the attraction, the club has chic dark wood decor and a balcony that commands sweeping views of the harbour.

To get so close to the water that you could drink it, try Citronella Cafe at 5 Nguyen Thi Minh Khai. But stick to the bottled water. For the purest water you can find, visit any of the stalls and cafes that sell green coconuts, where the vendor will hack one open for you with a machete. The coconut is free, but expect to pay for the straw to suck the juice out with.

5. Zen Spa
Founded to promote traditional Vietnamese therapy, Zen Spa (zenspa.com.vn) has two local branches. One, at the Hoi An Hotel, is right in the heart of town. The other, at the Hoi An Beach Resort is further out, by the seaside. Pampering services that come under the Zen Spa brand include facials, foot treatments, body scrubs, Pearl of Asia (incorporating exotic Thanh Long or 'dragon fruit'), Heaven and Earth (gentle body scrub with a great coconut aroma), The Five Elements ('fresh herbals and silver coins with ginger wine') and Forever Together ('fresh leaves and herbs'). Different.

6. Cua Dai Beach
So much appears in print about Hoi An's old quarter that the visitor may forget that the town lies beside the South China Sea. Fringed with palm trees, Hoi An's beach, Cua Dai, boasts clean white sand that stretches all the way to Danang and is short on hawkers: a blessing in a country where you are far too often assailed with the demand "You, buy my things."

7. Marble Mountains
These mountains are named after the crystalline metamorphic limestone from which they formed. Blessed with soaring, incense-filled caves and pagodas, the Marble Mountains have seen it all, fulfilling roles at various times in its history as a temple complex, battleground and hospital. In the latter of these roles injured Vietcong would convalesce whilst watching the ant-link figures of GI's playing on the beach below, oblivious of the enemy's presence.

The king of the Nguyen Dynasty, Vietnam's last ruling family, named the mountains after the five elements that make up the universe: (metal, wood, water, fire and earth). If you want to become at one with the universe, in characteristically business-like Vietnamese fashion you will be charged a small entry fee for each of the five elements with which you wish to harmonise.

8. My Son Sanctuary
The Unesco-listed My Son Sanctuary, often described as a Hindu holy land, rests in a remote jungle valley ringed by two mountain ranges. My Son once hosted the religious ceremonies of kings of the Champa dynasty, which ruled southern and central Vietnam from around the 7th century to the 19th. Unfortunately most of it was obliterated by the US Air Force in the war, but what remains is interesting, if only because the Hindu relics seem so out of place this deep inside Indochina.

The sanctuary consists of a string of semi-ruined but imposing tower-temples built by means that modern architecture does not understand. Often likened to the Cambodian temple complex Angkor, which the Champa sacked, My Son is a spooky place as awash with butterflies as with the spirits of the dead.

One of the strangest sight you will see in its grounds is the two American bomb casings dating back to a 1963 raid. The casings' shape echoes the deliberately phallic stone columns scattered around the sanctuary.

9. Phong Nha-Ke Bang National Park
The karst (limestone crag) configurations at Phong Nha-Ke Bang National Park stem from 400 million years of geological upheaval and growth. To get a sense of how slowly Phong Nha-Ke Bang evolved, consider that it takes a century for any of the stalactites or stalagmites to grow a single millimetre.

This Unesco site ranks as the oldest major karst area in Asia. It is big, too. Radiating from the border with Lao, Phong Nha-Ke Bang comprises 65 kilometres of caves and underground rivers. An adventure sports playground with a promising future.

10. Cham Museum, Danang.
This museum houses the world's finest collection of Cham sculpture and is a glorious testament to the artistic achievements of the Kingdom of Champa. The sandstone carvings of gods, beasts and celestial dancing girls possess exquisite beauty and grace and are so liberally displayed as to make it a challenge to fully appreciate this enchanting museum in a single visit.

Stilton - England's Great Blue Cheese

When you are considering the purchase of blue cheese you may want to investigate English Stilton. This great blue cheese is usually overlooked and underappreciated by cheese buyers because the Roqueforts, Cabrales', Valdeons and Gorgonzolas get all the attention. So we would like to shine a bright light on the magnificent blue cheese.

Stilton is known as the King of English Cheeses, and is only made in Derbyshire, Nottinghamshire and Leicestershire. It is the only English cheese protected by a certificated trade mark. The British name certification insures that the milk and the cheese manufacturing must be done in the above listed counties and that the production recipe and aging process must adhere to the guidelines established by the Stilton Cheese Makers' Association.

Stilton is a pasteurized, firm cow's milk cheese with a natural brushed inedible rind. It has dry rough or gritty brownish rind and an ivory colored interior paste that has large amounts of greenish-blue veins.The production of stilton begins when a culture of Penicillium Roquefortii is added to the milk and the starter, the rennet is added a short time later. After cutting, draining, milling and salting the curds, then shaping ( into cylinders) and turning by hand the cheeses, are stored in precise conditions of temperature and humidity to produce the characteristic crust and veining which created by inserting steel needles to aid in the aeration and mold growth. The cylinders are then aged for a minimum of six months, however the best Stiltons are aged for at least12 months and have a fat content of about 55%

Well aged Stiltons exhibit an inner paste that has a crumbly yet moist and creamy texture a spicy aroma and a sharp tangy flavor. This wonderful cheese should be savored at the end of a meal with a hearty bread and red wine. Any leftovers can be added to Crème Fraiche to create a tasty spread. Try to remember that this is a strong cheese and it will overpower most other cheeses. So, when using it on a cheese platter or at a cheese tasting serve it at the end of the line.

When shopping for Stilton avoid any that have gray interior paste or that fall apart when cut. Ask your cheesemonger to cut your cheese in layers not wedges, this will add eye appeal to your table setting. The condition of the outer rind will usually look unsightly but this is not really important and should not hinder you from purchasing it. Stilton should be covered with a clean damp cotton cloth and then wrapped with aluminum foil and kept in the vegetable bin in the refrigerator. If fuzzy mold develops on the rind just scrape it off.

The best brands to purchase are Long and Clawson Dairy, Cropwell Bishop Creamery, Colston Bassett and Thomas Hoe Stevenson all are readily available here in the United States.

Wine parings: All big reds, Bordeaux, Cotes-du Rhone, Sherry, a good Port or Madeira, also try it with a good hearty English or Irish Beer.

I Love Italian Regional Cuisine - Pairing Piedmont Cuisine With Red Wine

Piedmont is home to some of Italy's finest red wines including Barolo which calls itself "The king of wines and the wine of kings." Piedmont was an integral part of the French Kingdom of Savoy whose capital was Turin, the present capital of Piedmont. Subsequently Turin became the capital of the Kingdom of Piedmont-Sardinia whose official name was Kingdom of Sardinia, Cyprus, and Jerusalem, Duchy of Savoy and Montferrat, Principality of Piedmont. With all these influences Piedmont it's no surprise that Piedmont is home to some great food.

Bagna Cauda (Anchovy and Garlic Dip) is a classic Piedmont dish, best enjoyed with Grissini, Turin breadsticks. Bagna Cauda is easy to make, but if you want to do it right, you have to keep it simmering. Enjoy this dish with a Barbera del Monferrato DOC or a Dolcetto d'Acqui DOC, both Piedmont wines.

If your budget is unlimited why not try Brasato al Barolo (Braised Beef with Barolo) that calls for a bottle of this noble wine for two pounds of top round beef? Marinate the mixture for 12-24 hours. For a real treat, lard the meat with pancetta, Italian bacon, before marinating. Obviously Barolo DOCG is the first choice for the wine pairing. Other good choices are the Taurasi DOCG from Campania at the southern end of Italy or the Valtellina Superiore DOCG from neighboring Lombardy. Don't tell anybody, but I would be tempted to cook the beef in one of these other wines and drink the Barolo.

Can you guess what is the special ingredient in Risotto al Barolo? Make sure to use high-quality Italian rice, extra-virgin olive oil, and plenty of Parmesan cheese. The best news is that for each cup and a half of rice you use only half a cup of Barolo. So there will be plenty wine left to accompany this king of risottos.

A less expensive pasta dish is Tajarin in Bianco con Tartufi (Tagliatelle in Butter with Truffles), unless you get carried away with the truffles. Purists make the pasta from scratch. Enjoy it with a Piedmont Barbera d'Alba DOC or a Tuscan Rosso di Montepulciano DOC.

My mouth just waters at the thought of a Lepre al Vino Rosso (Hare in Civet). The unskinned hare is supposed to hang by its back legs in a dark place for three days. I'm willing to take my chances on substituting rabbit for the hare. Among the many suggested wine pairings include Aglianico del Vulture DOC from the southern region of Basilicata (try to get one made from grapes grown in volcanic soil), Tuscany's Chianti Classico DOCG or Vino Nobile di Montepulciano DOCG, or Abruzzo's Montepulciano d'Abruzzo Colline Termane DOCG. By the way, the latter two wines aren't even based on the same grape. Aren't Italian wines fun?

Have you ever had a sparkling red wine? You should. A fine choice is the Piedmont Brachetto d'Acqui DOCG also known as the Acqui DOCG. Enjoy it with Panetonne, a classic Italian Christmas cake, preferably one from The Piedmont.

Cabernet Sauvignon and Merlot 101 - Better Know Your Wines

Ahh... Cabernet-Sauvignon - Known to many as the "King of Wines".

This red wine is well known and quite popular, and is readily available in most local restaurants. But did you know that it this wine is originally from Bordeaux? And that this grape has planted a strong root in California's estates? Acidic and tannin components of Cabernet Sauvignon wines lend this vintage its form and long shelf life, optimally served after 5 or 10 years of aging. The grape specimen used in Cabernet-Sauvignon grows best in warm regions in locations like Chile, Australia and Eastern parts of Europe.

Pair this wine with red meats, because of its full and heartier flavour, as well as red noodle dishes, mutton, flavorful cheeses, and even chocolate (dark especially).

The fruit-like tastes have been likened to cherry, black cherry, black current and raspberry flavors. Merlot, Cabernet Franc, or Petit Verdot are the best choices to blend this grape with.

Merlot Noir, its real name, is the main grape in Saint-Emilion and Pomerol, and the various main (other than or except Cabernet-Sauvignon) of Bordeaux. This grape is widely grown in Eastern Europe with sizable plantings in Bulgaria, Hungary, and Romania.

Northeastern Italy has overproduced Merlot and so developed a tarnished reputation, but it is grown all over the world. In the state of California, it was initially grown for blending with vintages, however it now stands by itself and is growing in popularity.

The taste of Merlot always has a hint of black pepper combined with a range of blackberries, cherries, plums and blueberries. Merlot seems to be easier to pair, but works best with red meats, port, poultry, salads and pasta the best.

I Love Italian Regional Cuisine - Pairing Abruzzi Cuisine With Red Wine

Abruzzi is located on the central eastern part of Italy on the coast of the Adriatic Sea. The area is 2/3 mountains and 1/3 hills. If I remember correctly, the first time that I heard of this region was decades ago, when I learned that according to Craig Claiborne, at the time Food Editor of the New York Times, Italy's best food was found in Abruzzi. I don't know if this ambitious statement still holds but Abruzzi tables hold their own.

Lasagne Abruzzesi (Lasagne Abruzzi style) makes a good starter or a brunch dish. The major ingredients include ground beef, minced veal, eggs, dry white wine, flour (if you make the pasta yourself as the locals do), peeled tomatoes, grated Pecorino cheese, prosciutto fat, and ideally smoked local cheese. This recipe is fairly complicated but makes a delicious dish whose recommended wine pairing is a local Montepulciano d'Abruzzo DOC. It seems to me that after going to all this work to prepare the lasagna, whether or not you made the noodles from scratch, you should up the ante and go for a local Montepulciano d"Abruzzo Colline Teramane DOCG.

Another pasta dish is Macceroni alla Chitarra (Maccaroni made on a Chitarra) in which the word Chitarra signifies the guitar shaped instrument that is employed to make the pasta. This pasta is often served with a ragout of lamb stewed in wine and olive oil accompanied by tomatoes, garlic, and other goodies according to each cook's traditional recipe. The classic wine pairing is Aglianico del Vulture DOC from Basilicata.

Agnello alla Scannese (Lamb Scannese style) is a fairly easy to make lamb dish with dry white wine, olive oil, rosemary, garlic, and salt and pepper. There are many suggested wine pairings including Chianti DOCG and Brunello di Montalcino DOCG from Tuscany, Barbera d'Asti DOC and Barbera d'Alba DOC from Piedmont, or, if you want to go all out, try a Barolo DOCG, also from the Piedmont. However, Barolo modestly known as the king of wines and the wine of kings can be disappointing. I remember the day that I finally tasted this wine. The first Barolo was pedestrian at best. The second Barolo readily made up for the first.

For a change try an Octopus dish. The locals enjoy Polpi in Purgatorio (Baby Octopus in Purgatory) that is cooked in tomato, garlic, parsley, and diavolicchio, local hot chilies. As you go from the mountains to the coast, the dishes, including this one, get hotter and hotter. Don't miss out on the chilies but don't overdo them. If you like octopus and chilies, you'll enjoy this dish with an Italian Pinot Nero.

Why Wouldn't You Try a Grilled Chicken Salad For a Change?

Eating healthy is a choice at first and mandatory later on, but if you want to skip the mandatory part, switch to eating less fat and carbohydrates now. It is easier than you would think, and eating salads is not as bad as you would think at first. There are salads with marinated grilled meat in them and that is probably a push for many people to give lettuces a go.

Grilled chicken salad is an easy to prepare and good tasting variation, meat lovers can confidently try. Everything needed in this recipe is readily available in any local supermarket or grocery shop. You will need a pound of boneless chicken breast filet, this is going to be the heart of the salad.

Some lettuce you think you would like is also advised, if you can't decide, pick iceberg. You will need about 6 cups of it. Two cloves of garlic, a fresh lemon or two, a few cherry or cocktail tomatoes will do. Some garlic croutons are advised but not mandatory, these are the highest carbohydrate source in this meal, advised for the balance.

You will have the rest at home, 1/2 teaspoon of pepper and salt, olive oil is likely to be somewhere in your kitchen, if you just happen to be out, get some as you will also need half a cup of this for the marinade. If you're all out of cheese you can grate on this grilled chicken salad you will need to pick up 1/4 cup. Throw the lettuce, tomatoes, grated cheese and let it cool in the fridge until serving.

Mix the marinade, minced garlic, 3 tablespoons of lemon juice, salt, pepper and the olive oil. Brush the chicken strips. Cover everything and let it cool for an hour. After you're ready with the medium coal, put the strips of chicken on for a few minutes, and turn after 5-6 minutes. They are done once the middle is no longer pink. Let the strips cool a little, then cut into 1/2 pieces. Throw with the rest of the salad, add croutons and store in the fridge until you are ready to serve, or eat it yourself.

Eating healthy is not that big of a commitment some people make it out to be, and with this particular grilled chicken salad recipe it is no longer a choice between tasty and healthy foods, it is choosing both at the same time.

Nothing Says "I Care," Like a Casserole

The occasion often occurs when you want to bring a meal to a friend. It might be someone who's just had a baby or a family death or even just a stressed out friend. How many times has the intention crossed your mind, but been quickly dismissed? Maybe it's because you don't know what to bring or you are simply too busy. Whatever the excuse is, I have the solution. These tips will turn your good intentions into a reality.

The first thing you should consider is a meal that either makes enough to feed two families or one that easily doubles. Since you are already cooking for your own family, this will not add any extra time. You are simply stretching your efforts.

The second thing you should consider is something they can cook or bake at their convenience. That is why I like casseroles so much. They also make a lot and double. I recommend always keeping disposable pans on hand so you don't have to worry about getting dishes back.

Because you are feeding other people, you want something impressive, yet simple. You want something that re-heats well in the event others are bringing them meals and they will be having left-overs. And last you want something quick that is not going to take you all day.

Two of my favorite dishes for bringing a friend are King Ranch Chicken Casserole and Baked Ziti. There's a good chance that if others are bringing dinner, they will be getting plenty of pasta. However, that's not always the case and this ziti recipe is sure to please anyone.

King Ranch Chicken Casserole

2 boneless skinless chicken breasts

5 tablespoons butter

1/2 onion - finely chopped

1/2 green bell pepper - finely chopped

1/4 cup flour

1/2 cup water - reserve from boiled chicken

1 10-ounce can tomatoes with chilies - I prefer the Rotel tomatoes (mild)

4 flour tortillas

2 cups shredded Mexican cheese blend

1) Preheat oven to 350 degrees.

2) Boil chicken and cut into bite size pieces. Reserve 1/2 cup of chicken water.

3) In a skillet, melt butter and sauté onion and bell pepper. Once vegetables are clear; whisk in flour. Slowly whisk in chicken water and tomatoes (with juice.) Mix cubed chicken back into mixture.

4) In an 8 x 11 inch dish, layer as follows: 2 tortillas, 1/2 chicken mixture, 1 cup of cheese and repeat.

5) Cook for 30 minutes in preheated oven.

Baked Ziti

16-ounce box penne pasta noodles

1 lb package ground beef

3 cloves garlic - minced

2 jars spaghetti sauce

4 slices provolone cheese

1 cup sour cream

4 slices mozzarella cheese

2 tablespoons grated parmesan

1) Preheat oven to 350 degrees.

2) Boil and drain pasta according to direction on box.

3) In a large skillet, brown and drain ground beef. Add garlic and spaghetti sauce to ground beef.

4) In a large baking or casserole dish, layer as follows: ½ of cooked pasta, provolone cheese, 1 cup of sour cream, ½ of meat mixture, remaining pasta, mozzarella cheese, and remaining meat mixture. Top with 2 Tablespoons of grated Parmesan cheese.

5) Bake for 30 minutes.

Let's not forget dessert. Banana pudding is the way to go. Just put it in another disposable pan and 1 batch will be plenty for your family and theirs.

Banana Pudding

30 vanilla wafers

2 bananas - sliced thinly

1 large box instant vanilla pudding

1 8-ounce package block cream cheese

1 can sweetened condensed milk

1 teaspoon vanilla extract

3 cups milk

1 container cool whip topping - divided

1) Line the bottom a 9 x 13" baking dish with vanilla wafer cookies. Add a layer of sliced bananas.

2) In a large mixing bowl, combine pudding, cream cheese, condensed milk, vanilla, milk & 1/2 container of cool whip. Pour over cookies & bananas. Refrigerate for 3 hours.

3) Top with remaining cool whip before serving.

Authentic Barbeque Beef Brisket With Texas Dry Rub and Beer Mop Sauce

Barbeque beef brisket might just be the very beginning of barbeque itself. And it is certainly the king of meats in Texas barbeque circles. Although brisket has a reputation of being difficult to master, the truth is it is as simple as following a few steps. We will create the perfect barbequed beef brisket using three easy recipes.

This beef brisket recipe is best cooked on a charcoal barbeque pit, which includes a fire pit. If you do not own one, you can use a gas or charcoal grill, where you have the fire going on one side, and cook indirectly on the other.

Beef Brisket

Ingredients:

1 8-10 pound beef brisket, packer-trimmed

2 cups of Texas Dry Rub (see below)

2-3 cups Beer Mop Sauce (see below), in bowl

Use a packer-trimmed brisket for this recipe. That is a brisket with a thick layer of fat on one side. It usually comes sealed in a tight plastic wrap. On the day before you will be eating, pat the dry rub all throughout the meat, making sure to rub it into every fold. Place the brisket in a plastic bag and refrigerate overnight.

First thing in the morning, remove the brisket from the refrigerator and let it sit on the kitchen counter so it will get closer to room temperature. In the meantime, get the fire to your barbeque pit going to about 210 degrees Fahrenheit.

After an hour or so, when you, the mop sauce, and everything else is ready, place the brisket on the opposite side of the fire pit (the cool side).

At this point, many brisket cooks, say to place the brisket fat-side up so the fat helps baste the meat. We will go against the grain here, as this recipe seems to work better by placing the brisket fat-side down, so the fat can drip down into the fire, causing smoke to rise up and flavor the meat. Close the lid of the barbeque pit.

Maintain a temperature between 180 and 220 degrees, and cook the beef brisket for 1 to 1 1/4 hours per pound of meat. About every hour, when you feel like you just have to peek, go ahead and dab some beer mop sauce on the meat.

After done, shut down your fire, remove the barbequed brisket, and let it sit for 20 minutes. You will see where the brisket is divided into two pieces by a layer of fat. Cut through that layer to separate the two pieces. Then trim off the thickest parts of fat from bot pieces and slice them thin against the grain of the meat.

Serve barbeque sauce on the side, if desired. But never drench the meat in sauce. A little goes a long way.

Texas Dry Rub Recipe

Ingredients:

3/4 cup paprika

1/4 cup quality chile powder

1/4 cup ground black pepper

1/4 cup sugar

1/4 cup salt

2 tablespoons onion powder

2 tablespoons garlic powder

1 tablespoon ground cayenne pepper

Mix the spices thoroughly in a bow. This makes 2 cups of dry rub. You can store any dry rub you do not use in a sealable jar for up to 3 months.

Beer Mop Sauce Recipe

Ingredients:

1 12 ounce can of beer

1/2 cup fresh lemon juice

1/2 cup vegetable, corn, or canola oil

1/2 medium onion, minced

2 garlic cloves, minced

2 tablespoons of Texas Dry Rub (from above)

1 1/2 teaspoons worcestershire sauce

Mix everything together. Apply mop sauce with a small string mop made for barbeque. You can use a pastry brush if you want.
