A Glossary of Typical Thai Dishes - Part II

Continuing from last week's article, this week's article will focus on seafood and stir-fried dishes and Thai fruits. Certainly the fruits and the seafood are two particular strengths of Thai cuisine, and taken together the articles for both weeks outline enough dishes to help fill many months with a wonderful variety of flavorful and healthy dishes.

Seafood
Thailand is one of the lucky countries where seafood is abundant. There is a wide variety of seafood to choose from at a reasonable price. While not everyone likes or used to seafood, there truly is much to choose from and any different flavors and textures, making it quite possible one would find some favorite dishes.

Poo Pad Phong Ga Ri: Stir-fried crab with curry powder

Stir-fried
Stir-fried dishes are generally easy to prepare and cook, while fitting well with a variety of cooking styles, including many American approaches to making dishes. Thai stir-fried dishes often include more intensely flavorful and healthful ingredients than some common stir-fry approaches.

Buab Pad Goong Sai Kai: stir-fried sponge gourd with shrimp and egg
Chu Chi: stir-fried fish (or shrimp) with kaffir lime leaves, Thai sweet basil (Bai Ho Ra Pha) and chu chi chili paste

Moo Waan: stir-fried marinated shredded pork (or chicken) in oyster sauce
Moo Sup Tod: fried marinated ground pork with onion and spices

Pad Kra Phrao: stir-fried ground chicken (or pork) with Thai holy basil (hot basil)
Pad Kra Tium Prig Thai: stir-fried marinated pork (or chicken) in garlic and white pepper powder

Fruits
Because of Thailand's location, conditions have made Thailand produce a variety of fruit throughout the year. Thailand is well known for its tropical fruits. Many street vendors sell fresh fruits in slices as one of many Thais' snacks. The following are just to name a few of the delicious Thai fruits.

Chom Pu (Rose Apple): it looks like a pear but it is smaller. It has a green and pink waxy skin and white fresh
Farang (Guava): it has green skin with white fresh. The core has many tiny seeds that must be removed. The taste is sweet and sour
Ka Noon (Jack Fruit): it is a large fruits with greenish and yellowish skin. Its fresh is a small succulent segments with yellow color. It
is sweet fruit
Kluay (Banana): there are so many types of banana in Thailand, for instance, kluay hom (Gros Michel), kluay kai (Pisang mas), kluay leb mue
nang and kluay nam wa (Pisang awak). The most famous type is kluay nam wa
La Mud (Sapodila): both skin and fresh have a light brown color. It has a quite large black pit inside. To eat, one must peel the skin off
Lam Yai (Longan): it has a brown thin shell that cracks easily. A black round pit is inside the transparent fresh. The taste is sweet and
has a juicy texture
Ma Muang (Mango): the popular fruit during summer season. There are hundred types of mango. Some are eaten raw and some are eaten ripe
Ngo (Rambutan): it has a red skin with soft green spikes. The fresh is translucent and taste is sweet and has a firm texture. Also avoid the
hard pit inside
Noi Na (Custard Apple or Sugar Apple): the skin is green but the fresh is white and sweet and very fragrance
Som Kiaw Waan (Tangerine): it has a thin, green skin. It is a small with a size of a tennis ball. The taste is sweet
Som O (Pomelo): it like a grapefruit but it is bigger with a thick light green skin. The delicate fresh has varies color depending on the types
of pomelo. Some types have a pink color, some have yellowish color meat
Subparod (Pineapple): the abundant pineapple is irresistible. It is sweet and has a nice fresh smell to it
Turian (Durian): the skin is thick and has lots of spikes, but the meat is soft yellow with pit inside. It has the pungent smell and flavor
which many foreigners find it too strong

This overview of dishes starts to overflow, hinting at how many possibilities are out there. Thailand is host to many special ingredients, some of which it is difficult to reproduce at the same level elsewhere, but many of which can be found for dishes in a variety of locations around the world. It is my hope that these lists helped some readers explore new possibilities and provided a welcome reminder of enjoyable dishes to others. Bon appetit!

Liverpool's Greatest Ever XI

It is always an interesting topic of debate, to name the greatest ever, in any denomination, because people of different eras always believe that their era produced the best.

Well this is my list as regards players that I have witnessed play. Some of my choices no doubt, would be open to serious contention, some might be undisputed and some would make look a laughing stock but we cannot always be right.

Goalkeeper

Bruce Grobbelaar was good, sometimes, eccentric, sometimes erratic but usually very good. He would be always famous for his noodle knees wobbling in the penalty shoot out against Roma that so put off Graziani, that he blazed his kick well over the bar.

I never saw too much of Tommy Lawrence so I cannot pass judgement on his prowess so I have gone for Ray Clemence who was just a superb goalkeeper and should have won more caps for England but for the presence of the equally brilliant Peter Shilton.

Right Back

In a position that over the years has produced arguably the least number in outstanding candidates in any team, I have gone for Phil Neal, though Steve Nicol and Gary Gillepsie ran him a close second. Rob Jones started off brightly but lost his way after a while.

Left Back

Alan Kennedy was a very good and capable full back as is John Arne Riise. Avi Cohen was very good as well but I have opted for Steve Staunton.

Centre backs

This was a dilemma for me as Ron Yeats was thought to be a very good and solid defender, out but I never saw him play so it is difficult for me to judge how good he was. Phil Thompson and Mark Lawrenson were just edged.Mark Wright was good as are Jamie Carragher and Sami Hypia.

Tommy Smith started out as a very good central defender but I have gone for Alan Hansen and Emlyn Hughes who were calmness and passing ability and enthusiasm respectfully personified for defenders. They could both bring the ball from defence quite easily and Emlyn Hughes could actually play competently as a midfielder. He scored a lot of goals with his long range shots.

Midfield

There have too many fantastic midfielders like Ronny Whelan who was one of my favourites, Steve McMahon, Steven Gerard, Xabi Alonso, Jamie Redknapp, Ray Kennedy with his sweet left foot, Sammy Lee and Terry McDermott for their effervescence.

But my middle pairing would be Jan Molby for his passing ability and Graeme Souness because he was 1 of the most complete players to have played the game.

My left sided midfielder would be John Barnes who just edged it against Steve McManaman and Stevie Heighway. At his best he was 1 of the most exciting players for Liverpool ever.

Forwards/strikers

Again, there have been quite a few excellent strikers that have played for Liverpool and I am sure 1 of my choices would not meet with universal approval. Michael Owen, Roger Hunt, John Aldridge, Peter Beardlsey and most of all Ian Rush deserve mention as they were all fantastic for Liverpool but I have gone for 3 of my favourites and they are King Kenny Dalglish, King Kevin Keegan and "God", Robbie Fowler

My favourite Liverpool team however out of all the countless championship winning teams, is the Kenny Dalglish side that included, Hansen, Whelan, Beardlsey, Barnes, Rush, Aldridge, McMahon, Houghton and Ablett. They played the best football of any Liverpool side I had ever seen

Chef Liu - Atlanta Restaurant Review

On a lazy Sunday afternoon with a craving for Chinese food gnawing at our insides, my girlfriend and I decided to make a jump over to Buford Highway and try out yet another new spot for lunch (new to us).

So I took her to Chef Liu's. It's on Buford Highway, about a mile ITP.

As we got closer and I pointed out where we were going to be eating, my girlfriend made it clear to me that she did not want to eat at this shack in the middle of a parking lot! After some heated convincing, we opened the sliding glass door (sliding as in, like the one you have going your backyard) and sat at a table closest to the kitchen. Not that we could see through the bamboo shade hanging down and dividing the trailer.

Ambiance? It's so awesome here. With six or seven plain tables set inside a trailer and little decoration other than the strip mall you see on the other side of the parking lot through the glass walls, Chef Liu's is closer to what you might find in other countries that allow food to be sold from run down shacks on the side of the street - at least closer than most places you'll find here in Atlanta.

Cold Noodle dishes, dumplings and soups are the main offerings here, although we also ordered a leek pie - absolutely delicious and we ate it long before our actual meals arrived. The pan fried pork dumplings are beautiful and look exactly like the picture in the overhead wall menu. You won't find these at P.F. Chang's.

You can't compare Chef Liu's to a regular restaurant or most other places. It's simply different and unique. Of course they don't use the highest quality ingredients, of course it's not food you would find at a 'finer' establishment - this is food for the masses, cheap food done well. Your food comes out fast and hot and you feel like you're eating at some secret spot that only the best know about - no matter how many people eat here on a regular basis. About as quick as ordering food at Burger King or Wendy's, but not as bland and generic as Panda Express - this is good, different fast food.

Sitting there with your limited basic mandarin you picked up from pimsleur during your morning commute, you over hear the waitresses talking to each other and with the customers - people who aren't foodies obsessed with finding the most authentic any thing. Just a spot to get good food reminiscent of their homeland while living in the deep south. This place is great and will always be near the top on the list of choices when I get that gnawing feeling for some dumplings and a slightly different menu offering.

Review Summary: 4.6

International Protocol and the BRIC Countries - How Important Are They to America's Business Future?

If you're in business and not aware of BRIC, you might think its material for building a structure - it's not. It is, however, a possible building block for American companies looking to the future.

"Dreaming with BRICs: The Path to 2050" is an economic study released in 2003 by financial giant Goldman Sachs. The report focused on four developing countries: Brazil, Russia, India and China. It predicted that these four BRIC nations' economies could grow to be bigger than the entire Group of six (G6) leading industrialized countries, which includes the United States, Japan, the United Kingdom, Germany, France and Italy.

The report went on to suggest that the BRIC countries would become not only the primary source of manufacturing and the major suppliers of commodities, but also significant consumers.

Anyone in business can see the considerable importance of this last statement and its impact on the potential growth for American companies that are thinking "global".

A company which has the ability to understand and appreciate another's culture and customs will have the most success in today's international arena. The training of employees, from senior management down to the person who answers the phone, must include an understanding of culture and customs to maintain the highest levels of customer service for its international clients.

An American businessman in Brazil, thinking he was showing his approval, gave the "OK" hand gesture to a client. Later he was told that hand gesture is considered terribly rude in Brazil! It's also considered rude or insulting in Russia and Germany, but has a whole different meaning in France and Japan.

Never underestimate the importance of protocol in dealing with another country. "Know before you go" and act in accordance with their culture, customs and religious observance.

Listed below are some things to consider before doing business with a BRIC country or with any international client.

Cultural Awareness
Is the country a monochronic or polychronic culture?
These are basic cultural preferences in how life is approached, how time is perceived and how business is done. All BRIC countries would be considered polychronic, meaning they take the time to build relationships before they do business. For Americans, who are monochronic - straight down to business, this is especially important to know in contract negotiations. A deal could be lost just because the international client was put off by the approach.

Handshakes
Customs differ around the world. In Brazil, it's a warm handshake (but not a "wet noodle"); the Russian's prefer a firm handshake along with direct eye contact. In India, the traditional greeting is the Namaste: palms of the hands pressed together in a praying position and held about chest high, accompanied with a slight bow forward. China uses a nod or slight bow; they do not smile when being introduced, or the American handshake is acceptable.

If you're unsure of what to do, it's generally acceptable world-wide to use a toned-down American handshake.

Business Customs and Terminology
Appointment times, date annotation, and units of measurements can vary widely. A meeting in the U.S. may take place at 1:00 PM, while in other countries it would be 13:00 hours. The U.S. writes 8/12/08 or August 12, 2008, as opposed to 12.8.08 or 12 August, 2008. Measurements in the U.S. are in gallons and inches, while many other countries use liters and centimeters. These may seem like small idiosyncrasies, but they could cause misunderstanding and confusion within a developing business relationship.

Some other things to be aware of are body language, introductions, gift giving and the importance of rank and status.

Research is the key to successfully acquiring and maintaining international business relationships. Fortunately, there are many books and government websites available for different countries for those who wish to do it themselves. But today, businesses are starting to rely on highly-trained etiquette consultants on international protocol to educate them on the many and sometimes subtle cultural differences.

Learning about another culture is not only a key business strategy; it is the single most important skill in building a long term international business relationship. Mistakes made at the start can delay and or even cost a company business. So learn before you go, act well and you will do well.
