Beneficial Things To Know About Cast Iron Cookware

Cast iron cookware has been around for thousands of years, dating back to ancient china. In the middle ages over in Europe cast iron was considered just as valuable as other riches of the era, such as jewelry and gold. Cast iron products manufactured in the United States was one of the first industries that was organized. It is not as popular today because of the advancement of other metals but is still widely used for cookware because of it's conductivity and durability.

Cast iron cookware has been one of the longest lasting types of cookware if not the longest lasting type of cookware out there. There are preseasoned and enameled products out there today. Cast iron cooking products come in wide variety of shapes and sizes, not just for pans and skillets. You can find dutch ovens, roasters, muffin pans, corn bread pans and more. Because of technology, the iron alloys used in todays cast iron has improved it greatly, adding more strength and durability.

Original cast iron pans still need to be preseasoned as they rust easily and food will stick to it. To preseason your pan preheat your oven to 250-300 degrees. Coat the pan with some type of fat such as lard or bacon grease, you can also use "manteca" a type of lard used in mexican cooking. Avoid using a vegetable oil because it will leave a sticky coating on your pan and will not be seasoned properly. Coat your pan with the desired animal fat ( grease )and put into your preheated oven. After about 12-15 minutes remove the pan and discard any excess grease and return to your oven for 2 hours. This ensures that your pan has absorbed the grease into the pours of the metal. It is recommended that this procedure is done a few times to strengthen your seasoning bond.

If you have an old cast iron pan that has been rusted or food is sticking to it don't throw it away, it can be salvaged. Simply heat the pan to a temperature that you can still work with as this will open the pours of the metal and then use a scouring pad and hot soapy water to clean it. Dry your pan thoroughly and then reseason. If it is really rusted bad try using salt when scrubbing your pan, this will help with rust removal.

Always keep your cast iron pans dry when you are not using them. Clean them while they are still hot with hot water, no soap because it will break down the seasoning. Don't use anything abrasive when cleaning such as steel wool because this will scrape off your coating. You will not want to cover your pans with lids as moisture can collect which can start to rust the metal. Try not store food in them either as acids from the food will react with the metal and break down the seasoning and the food will take on a metallic flavor.

Over all cast iron is great for cooking and baking. Because of it's conductivity it is perfect for browning and frying. It is relatively inexpensive but it is heavy. It is the perfect type of cookware for camping because it is so durable and will hold up to campfire cooking. It is great for cajun style blackening and searing. I believe everyone should have at least one cast iron skillet at there disposal.

What's Wrong With Our Food?

Processed foods made for fast-food outlets and supermarkets are missing chemicals needed by pregnant women for their fetus to develop a healthy brain, retina, and nervous system. A diet made up of these foods is likely to be poor in trace minerals, some B vitamins, dietary fiber, antioxidants, and omega-3 fatty acids, deficiencies that cause behavioral problems in children and depression in adults. In the past, our foods contained more of these essential ingredients. Today, our diets are not only lacking in these and other essentials, they also contain excessive amounts of sugar, high fructose corn syrup, salt, MSG, saturated fat, and trans-fatty acids, ingredients clinically proven to promote obesity, diabetes, high blood pressure, heart problems, and cancers, according to international researchers who have issued dramatic health warnings about the foods we are marketing to the world.

Here is an example of a recent change in regulations by the USDA to accommodate food industry demands. After years of prodding by the Frozen Potato Institute, in June 2004, the USDA reclassified french fried potatoes, even those that are batter-coated, as "fresh vegetables," arguing that a fry is no less fresh than a waxed lemon. The new regulation allows fries to be substituted for salads and vegetables in school lunch, day care, and other government-subsidized feeding programs. The frozen potato product industry is hoping that the change will help it recover from the drop in U.S. consumption of about 3 percent since 1996. A major reason for the decline is the attempt by consumers to avoid "heart-unhealthy" trans-fatty acids present in french fries along with the cancer-causing chemical acrylamide, which is also found in breakfast cereals, bakery products, and snack chips.

Swedish scientists in 2002 discovered significant amounts of acrylamide in starchy foods after high-temperature commercial frying, roasting, and baking, including the most popular American foods consumed by people of all ages. Foods with high levels included breakfast cereals, potato and corn chips, french fries, bread, rolls, pizza crust, cookies, and pastries. Levels greatly exceeded the EPA allowance for the chemical in drinking water. Another possible source of acrylamide, a potent nerve toxin and probable carcinogen that also affects male fertility, are from the residues of a widely used industrial ingredient, polyacrylamide, in pesticide formulations and soil treatments among other commercial uses. The UN has called on governments to work with their food industries to significantly lower the level of acrylamide in foods. International health agencies have urged the consumption of more antioxidant-rich fresh fruits and vegetables to mitigate the damage from this and other toxic food ingredients.

Now, USDA lunchroom managers or their vendors can plate up fries as the vegetable of choice for school lunches, not what most of us would consider a healthy meal for kids. The whole point of the school lunch program paid for with our tax dollars was to introduce children to a nutritious meal and instill healthy food habits they may not learn at home. Do we need to pay schools to teach kids to prefer french fries? The USDA seems to have lost its way under the golden arches.

Pickpocketed, Diseased, and Surrounded by Prostitutes in Singapore

Thanks to budget airlines I was able to pick up cheap tickets to Singapore from Perth (Western Australia). I had never been there before and it was a short trip from there to Malaysia so it also gave me chance to visit family after a few days of exploring. This did not turn out to be a good trip...

Since budget airlines don't feed you (I've now learnt to take sandwiches on board) the first thing I wanted to do once out of customs was get food. I lined up at the first place I saw and checked to see how much money I had on me. I remember the exact feeling I had when I discovered my wallet was missing. I figured I had dropped it on the plane so I quickly went to the airline counter to see if they had found it on their clean up. After 10 minutes of listening to them ramble back and forth on their walkie talkies, they told me that it was not on the plane and that I must have lost it between getting off the aero plane and walking through customs. I think a more likely story is that the flight attendant found and pocketed it, or I was pick pocketed.

Either way, this left me with no money or credit/debit cards. I rank Singapore airport as one of the best in the world, so it was no issue to find a bank. Unfortunately they couldn't do anything, even though I had all the numbers of my cards. I was directed to catch a taxi to town to sort it out. With no money this was not an option. I decided to just wait in hunger for my connecting flight to Malaysia which was in 30 hours. I spent most of this on the free internet outside Burger King. Not the best place to be on an empty stomach, but I remembered Tom Hanks in the the movie Terminal and so dined on crackers.

Once in Borneo I went straight to my Step-Mums house and sat on the phone for 8 hours. 5 days later a money transfer from the bank arrived. It was lucky I had family in Malaysia I would have been sleeping on the street with nothing to eat.

After my visit to Sabah and now 'cashed' up I went back to Singapore where my return flight to Perth was from. I had it planned to spend a couple of days there. As soon as I stepped out of the airport the thick, humid air hit me. It was the same as in Malaysia but I guess I subconsciously thought that since it was known to be the cleanest city in the world then the air would be clean and fresh. I took a deep breathe and headed for accommodation. The train system in Singapore is very good and I had no problem finding my hotel.

I stayed in an area called Geylang. It seemed ordinary enough. A few noodle shops, general stores etc. I wasn't feeling to great so I arrived at my hotel and slept it off until dinner time. When I awoke however, the quaint little 'suburb' seemed to have turned into one big Brothel. There were no families eating in the restaurants at this time of day. After a 10 minute stroll and about 10 offers of women for hire, I found a place that wasn't overpopulated by gangsters and ordered.

As it turns out, Singaporeans are very friendly. A middle aged man took a chair next to me and an array of dishes came out. 'Please, help me eat' he said to me. We ate and talked until about half way through and then decided that we would never get through it. He then invited some of the local ladies of the night (who were just hanging around talking to the patrons, I'm guessing, trying to pick up some work') to come and join us. He would say something to them in Chinese, they would laugh, then he would talk to me in English, usually something about his wife and kids. I guess by telling me about his family it made him feel OK about flirting with the prostitutes. I saw nothing wrong with it, he was having a good time.

The girls helped finish the food, then he tipped them for helping us eat. I went back to my hotel early that night as I was still feeling unwell. I only spent another 2 days in Singapore but it was more than enough. In fact, it was very similar to my home town, Perth. Only cheaper, humid and Asian. I was still crook by the time I got home so went to a doctor. I ended up having some kind of fungal disease. It went away after a few more days but wasn't pleasant.

Prunes - They're Not Just For Regularity Anymore

A prune is a dried plum. Most of the prunes consumed in the United States are prepared from a variety of plum called La Petite d'Agen, a tree native to southwest France. When it is harvested, this plum has a royal purple outer skin and amber colored flesh. When it is dried, the plum becomes purple, shriveled, and concentrated in both fiber and sugar.

Recent research suggests, surprisingly, that the fiber found in fresh and dried pitted prunes may help prevent breast cancer. In women who have not reached menopause, eating 100 g (about 3 1/2 ounces) of dried prunes every day shifts hormonal balance away from an active form of estrogen, 16 -hydroxyestrone (16 OHE1, to an inactive form of estrogen, especially during the first half of the menstrual cycle.

For the same reason, prunes help prevent acne in women of reproductive age. Among premenopausal women who eat prunes, acne outbreaks should improve every month, most noticeably during the first two weeks after menstruation, although during the first month women eat prunes acne should get a little better every day.

The most familiar use of prunes, of course, is for promoting regularity. Because it is so hard to imagine how hundreds of millions people in almost every country in the world who eat prunes for regularity could be wrong, no scientist has done even one scientific study to prove their usefulness in treating constipation.

Scientists speculate that prunes stimulate bowel movements through a mechanism similar to milk of magnesia: their high content of the sugar sorbitol draws fluid into the colon and makes the stool softer and more watery. Prunes have other scientifically demonstrated nutritional value: they are a rich source of potassium, which is beneficial to cardiovascular health, and an important source of boron, which plays a role in the prevention of osteoporosis. And no one can argue that they do not relieve constipation.

Ramen - The Wonder Noodle!

Ramen is a short typical noodle meal exceedingly popular in Japan. It is what is called more than just a quick meal. It was originated in China in 1800s and was brought to Japan. It is the staple dish of Japanese and a new cultural phenomenon. There are many ramen towns and popular ramen shops in Japan. Not to mention, Tokyo is the most famous city for most of the Ramen shops in Japan.

Ramen shops in Tokyo compete with each other for their uniqueness in noodle, soup ingredients and toppings. Japanese roam around and get their favorite type of Ramen. Most of the Ramen shops in Tokyo are of open kitchen style with counter only seats. In these types of shops, there is only one person who performs all the functions like cooking, serving and collecting money. Such a person is so enjoyable to watch for his or her rhythmical movement while cooking.

Ramen noodles come in usually flat, fat, thin, and ribbon-like sizes. They can also be straight or wrinkled with yellowish hue. They are always served in a hot broth flavored with miso or shoyo and toppings like beef, seafood, chicken, spring onions and seaweed.

This unique dish is so popular that different regions in Japan have themed their variations based on their geographic origin. Healthy Food Alternatives

Many would be slimmers feel that the foods to make them slim are the more expensive items on the shopper list. However, this need not be true.

You can prepare inexpensive, low-calorie meals using let-overs if you wish, and still stay slim. Nor is there any need to prepare and cook an extra meal for one, You can join the family confident that you can make the same meal with just a little extra calorie watching on your part. There is no need for a slimming diet to be different from or more expensive than, that of your family. Eat the same meals but do avoid the high-carbohydrate and fatty foods. If you incorporate the diet into your daily pattern of living, your weight is easier to maintain.

Putting Healthy Eating Guidelines into Practice

Meats: -

Choose lean cuts of meat, such as topside, blade, rump, fillet, gravy beef, veal steaks, pork fillet and trip lamb varieties, such as lean lamb chump. Choose the leanest mince

Ø Drain the fat from mince during or after cooking.

Ø Trim visible fat from meat before you cook it

Ø Keep meat proteins small (100g) and bulk up meals with vegetables and legumes, bread, rice or pasta. Cook vegetables light or steam them when possible to retain their nutrients.

Ø When roasting meats, trim the visible fat from the meat and place meat on a rack in a baking dish with 1-2 centimetres of water. For additional flavour add herbs and wine to the water. Alcohol is harmless when used with heat in cooking.

Cheese: - Select low fat cheeses varieties, cottage cheese or ricotta, reduced fat or low fat milk. Do not just try these once, as it may take a while tor your taste bud to adjust. Try low-fat yoghurt you can hardly tell the difference in taste.

Oil: - Olive oil, sunflower oil, safflower oil, canola oil and grape-seed oil are good vegetable oils to choose.

Grains: - Choose wholemeal bread, pasta, flour and rise instead or white

Breakfast Cereal: - Should be high in fibre.

Salt: - Choose low salt (sodium) or no added salt products by comparing food labels and selecting products that have no added salt.

Dressings: - Make your own dressing and mayonnaise using low-fat yoghurts, buttermilk, tomato paste, vinegar, lemon juice, ricotta cheese, mustard and fruit pulp. Buy dressings labelled No-Oil or Low Fat

Margarine or Butter: - Use avocado, chutney, cottage cheese, and low-fat mayonnaise

Cream: - Use evaporated skin milk with gelatine and chill before whipping.

Sour Cream: - Low-fat yoghurt, buttermilk, evaporated skim milk or lemon juice.

Frying: - Use a non-stick fry pan and cooking spray or brush the base of the pan with oil instead of pouring oil into the pan.

Tips to help reduce your fat intake

Grilling instead of frying

Use a rack filled with a little water when grilling, roasting or baking meat. Marinate very lean meat in a mixture of soy sauce, wine, herbs, garlic or spices. These will prevent the meat from drying out while grilling.

Steaming

Is an ideal way of cooking most vegetables? The food is quickly cook y the steam and does not need any fat.

Microwave

Microwaving is a great way to cook. The microwave allows foods to keep their flavour and moisture while they cook.

Stir Fry

Use a wok or non-stick pan. Use a spray-on oil, water, wine or stock to fry your vegetables and then quickly mix in your lean cooked meat.

Casserole

Casserole cooking is a slow, gentle moist way of cooking that can also be low fat. Before cooing, trim the fat off the meat or skin off the chicken. Do not add any extra fat to the casserole. Allow the casserole to cool and skin any extra fat off the surface. Casseroles divided into serving sizes and frozen are ready prepared meals for people in a hurry.

Baked Vegetables

First par boil vegetables, spray with vegetable oil, place in a dry pan and cook in an oven on high until crisp.

Gravy

If you use the meat pan juices to make gravy, pour the juice into a cup and place in the freezer, when it is cool but not frozen remove the solid fat layer that forms on top. The remaining juice can be use to flavour your gravy.

Mince

When using mince, brown it first in a dry pan and drain off the excess fat before adding the other ingredients.

Butter

Add low fat yoghurt or cottage or ricotta cheese to vegetables.

Cream

Substitute cream with evaporated skin milk or blend skim milk with ricotta cheese.

Sauces

Creamy sauces can be made with Skim milk powder in double strength that adds a creamy texture without the extra fat.

Mayonnaise

Try low fat natural yoghurt instead of mayonnaise in recipes.

Salad Dressing

Make a mixture of lemon juice, herbs, mustard and vinegar it makes a great and tasty dressing.

Avocados

Avocados have a rich and creamy texture, they taste delicious and what is more, they are good for you. Packed with vitamins, minerals and antioxidants, avocados make a great addition to a hearty diet. Make avocados part of your daily diet

Ø Replacement for butter or margarine on toast or crackers

Ø Slice and serve with fresh seafood

Ø Use as a topping to Mexican dishes such as tacos

Ø Mashed and served as a dip on vegetable platters

Ø Mash and serve on jacket potatoes

Ø Add to salads for a creamy taste and texture

Recipe Solutions

Buttermilk: - Plain yoghurt mixed with low fat milk

Buttermilk Alternative: - If you need buttermilk for a recipe, and need to make your own: - Pour together 1 tablespoon of each white vinegar and milk into a measuring cup, and then fill up the rest with milk. Let stand for 15 minutes until it thickens

Cakes: -

Ø Cake layers are often brushed with liqueur. The best substitute is syrup or sweetened juice.

Ø Next time you bake a cake dust the tin with dried coconut instead of flour

Ø Throw in a couple of tablespoon of your favourite jam over the top. When cooking the jam soaks through giving the cake a delicious flavour.

Ø Every time you open the oven door the temperature of baking drops by 50% and cakes can drop I the centre and others will take longer to cook

Ø Adding grated carrot, fruit, or chocolate, mashed banana or a can of mixed fruit salad will enhance the flavour of a plain packet cake mix

Ø Adding a drop of oil to a packet of cake mix will keep it moist and light.

Ø Mix 100s & 1000s through a vanilla cake mix. They will melt during the cooking process releasing a great rainbow colours effect. Kids love it.

Ø Decorating made easy: - Place a piece of chocolate in the corner of the microwave-roasting bag and melt it, snip off the tip at the corner of the bag and drizzle a pattern over the cake.

Cabbage: -

Ø When cooking cabbage avid the smell around the house put in a couple of slices of lemon in a small bucket of water and place it in the kitchen.

Ø Cabbage & Brussels sprouts smell when cooking, place a slice of stale bread crusts over the cabbage, it will absorb the odours.

Casserole: -

Next time you cook a casserole, try slicing small French stick into 12mm slices, spread one side with mustard and press gently into the top of the cooked casserole leaving the top exposed. Place under the grill until golden brown.

Chicken: -

Next time you season a chicken; add 2 teaspoons of grated orange rind to the mix delicious.


For a fat free roast chicken, sprinkle with paprika and place chicken in oven with no oil, but a little water to the bottom of the pan will keep it moist
When you cook apricot chicken, add a packet of chicken noodle soup. The flavour is superb
Marinate chicken wings for 1 hour. Half cook in microwave oven on high. They are now ready to go on the barbeque saves time barbequing, and taste delicious and do not burn.
Add ½ Cup of crushed cornflakes to the crumb mix for a golden crunchy taste
For a nice stuffing: - Peel and finally chop a granny smith apple, add a good handful of sultanas and a teaspoon of cinnamon

Chips: -


Low-fat chips can be make by peeling and slicing potatoes thickly, place them on a greased pan (Canola spray is best), and cook in a moderate oven for 40 minutes.
Kids at times could not finish the packet. Resealing the packet and store in the freezer can save it. Oil does not freeze so this keeps them crunchie for weeks.
Cut an unpeeled potato into thick wedges; dip into seasoned egg white and place skin side up on a baking tray. Bake on 180c for ½ hour or until tender and crisp
Chips made from freshly cut potatoes soak up less fat than frozen chips. Oven chips are the healthiest of all.
Potato Chips brown more quickly if a pinch of salt is added to the fat.

Coffee: -


Roasting the beans reduces their moisture content and releases the flavour and aroma. The fruit, a pulpy berries, turn red when ripe. Each contains two beans. Coffee beans turn various shades of brown when roasting
To make a perfect cup of coffee always put them in order of coffee, sugar, milk before adding boiling water.
Coffee is getting more expensive. If you place some change in a jar every time you have a cuppa. The money comes in handy when you run out.

Coconut: -


Coconut ice: - Pour coconut ice mixture into ice cubes trays for perfect bite size servings
Coconut milk: - use coconut milk instead of dairy milk in your cakes makes great flavour.
Toasted coconut and lemon juice sprinkled over the curry helps bring out the flavour.

Croutons: -


Make your own using stale bread. Take away the crusts, butter the bread, cut in cubes and place in oven 200c for 4 minutes, turn over and toast the other side.
In the microwave, heat 2 tablespoons butter on high for 1 minute. Using white bread cut the slice in cubes, shake well to coat and then cook on high for 2 minutes, stirring once while cooking.

Crumbs Bread: -

Make your own and save. Do not throw away stale bread. Remove crusts and bake in slow oven 120c until dry and then crush with rolling pin

Dressing Low joule: -

Mix together the plain yoghurt, a squeeze of lemon juice, a little grated cucumber, a little chopped mint and seasoning.

Dried Fruit: -

Stop them from sinking to the bottom of your fruitcake. Toss them in cornflour before adding them into the cake

Fruit: -

At times, fruit salad or fruits are soaked in wine or liqueur. For a substitute, replace this quantity with Syrup, Orange and /or lemon juice and rind.
