Crepes Suzette - A Classic Dessert Fit For a King and Today's Home Chef

No food is quite so debonair
Nor so imbedded with savoir-faire.

There are many famous desserts in the world but how many have inspired such a charming poem? Only crepes suzette - that reputedly serendipitous combination of oranges, ignited brandy and thin pancakes.

Such a tribute is befitting a dessert whose origins are still shrouded in mystery. The story behind the creation of crepes suzette is still disputed and there are parts of it that do indeed defy reality. As the popular story goes, in 1895, fifteen-year old kitchen apprentice Henry Charpentier accidentally ignited a dish of cordials intended as a sauce for orange-infused pancakes. As guests awaited, Charpentier impulsively decided to serve the boiling sauce over the pancakes. Fortunately, he tasted it first: "This is the most delicious melody of sweet flavors... The accident of the flame was precisely what was needed to bring all those various instruments into one harmony of taste."

The future Edward VII of England, a notorious gourmand and described by Charpentier as the "world's most perfect gentleman" happened to be among the guests that night. According to Charpentier, he was so impressed with the sauce that he took great care to consume every drop. He rewarded the young man's efforts with the gift of a jeweled ring and panama hat. He also asked that it be named in honor of one of the evening's dinner guests, a lady companion known only to history as the elusive "Suzette."

While ceding credit to Charpentier for introducing the dessert and its signature flames to America, other experts cite French chef Jean Redoux as the original creator. Redoux allegedly created it much earlier, in 1667, for Suzette, the Princess of Carignan.

However this dessert came to be, its permanent place in the world's dessert hall of fame is not a matter of dispute. Its delectable taste and show-stopping presentation will forever ensure its popularity. In America, the dessert reached the pinnacle of popularity in the middle of the last century, when it became the dinner finale of choice to socialites and housewives alike.

As with any timeless recipe, crepes suzette has inspired a host of variations. For the sauce, Charpentier used vanilla-infused sugar and fresh oranges, Julia Child used just an orange-infused butter, and Tyler Florence adds tasty and eye-appealing kumquats.

The crepes themselves have also been subject to a redo. Modern chefs have created souffleed versions that are served with a sauce of rum and orange liqueur. And although the flaming technique is no longer deemed essential for the flavor, it, too, has been taken to new dramatic heights recently through the occasional addition of sparklers to the final dish.

The preparation of crepes suzette at home has naturally gone the way of the elegant dinner party, which has been on the decline for years. Today it is more common on the menus of exclusive restaurants. However with its simplicity and spare ingredients, there's an argument that a revival is overdue. In today's fast-paced world, a no-bake dessert such as crepes suzette might easily find its place in the casual entertaining world where party guests simply gather in the kitchen to watch the chef, who is more often also the host. After all, as the poem tells us:

And yet, withal its rich appeal,
So fitting for a prince's meal
The fact remains--and what a shame!--It's only
Pancakes set aflame.

Eating Out in Bangkok

Bangkok is one of the world's greatest cities for food, it's everywhere! You can take your pick from street vendor food, small family run restaurants, mid range chain restaurants in the shopping centres, international food, fast food and Michelin star restaurants.

Whether you want Pad Thai, chicken and rice, pizza, Indian curry or a Zinger burger...Bangkok has it all!

A lot of people I know return from Bangkok saying that the food wasn't as cheap as they were expecting. When I ask where they ate the usual answer is, "oh in the hotel bar". You can pay over the odds for food in Bangkok if you want, if you're prepared to search and perhaps eat in the more plain looking family restaurants then you'll find the legendary tasty and very cheap Thai food.

Here, I will try to give a rundown of the sort of thing you can expect to find in Bangkok along with a few personal recommendations.

Street vendor food

It is a bit clichéd, but it's true that the best food in Bangkok is the street vendor food. Sure, the surroundings are less than salubrious, but I just love the atmosphere and the feel of eating food by the side of a busy road, sat on a plastic stool! You'll find these set-ups all over the city, usually a group of people together each with their own speciality on their own cart. The most common dishes are chicken and rice (Khao man gai), red pork on rice (khao muu daeng), Pad Thai, many kinds of noodle soup and various curries. Just be adventurous and if you're not confident with the language you can always point to what you want! Always have a glass of Thai-style icy milkshake on hand if something is unexpectedly spicy! I always find milk is much better than water at cooling your mouth down.

A good tip from a local if you're not sure which vendor to choose, is go to the busier ones. That generally means the food is tastier and safe. I've never had any problems eating street food.

Other items for sale include various grilled meats on a stick and fruit portions. My personal favourite are the various vendors that line the wall of Lumpini Park in the evenings, in the car park area along Ratchadamri Road. The stalls in the Patpong/Silom area are also very popular.

Thai family restaurants

The Thai family restaurant is something that many foreigners never experience. A lot of people are put off by the bland appearance of these places, they are also quite hard to spot and many people just don't know they're there. At a glance it may look like someone's house with the shutter doors left open. Look more closely and you may see the old aunt or grandmother of the family cooking noodles or chopping up chicken at the front of the shop! The décor is usually very basic, flimsy metal tables, plastic chairs and bare walls. The only decorations are spirit houses with the daily offering of Fanta and portraits of past and present royals will hang on the walls.

The food, however, is out of this world and always at a reasonable price. The menu choice is, of course, far more extensive than the street vendors. Always look out for the fish dishes, some are extra spicy! Yam Mun Sen (spicy sea food salad with noodles) is also a personal favourite.

A good choice in terms of location is Lek seafood, not far from Chong Nonsi skytrain station.

Chain restaurants

There are many good quality and fair priced chain restaurants around Bangkok, usually to be found in shopping centres and supermarkets. Listed here are the major ones:

Bar B Q Plaza - My personal favourite, I have to eat here every time I visit! Essentially you're set up with a mini gas heated grill in the middle of your table, which also has a small moat of soupy water around the outside. You order plates of meat and veg and cook/boil it yourself. You will be given some dipping sauce, lime, garlic and chilli which you can mix to suit yourself.

Daidomon - Along similar lines to Bar B Q Plaza, except you actually get a small barbeque in your table instead!

Fuji - A hugely popular chain of Japanese restaurants, serving all the usual offerings of sushi, gyoza, tempura, curries and much more.

Oishi - Another big favourite with Thai's. There are many variations on the theme, but it's basically a Japanese style buffet restaurant, pay one price and eat all you like. The bigger ones serve sushi, teppanyaki (made to order) food and various Chinese foods that are rotated.

See Fah - Serves a good selection of Thai food.

Sizzler - Get there early because these places fill up fast! Popular with Thais and tourists, this is an American fill-ya-face steakhouse with an extensive western menu and unlimited salad bar. You could get seriously overweight if you ate here every day!

MK - Similar concept to Bar B Q Plaza, but here you boil all of your own food. They serve hot items off the menu too, the duck is a favourite.

Pizza Company - Despite the name, this is a Thai pizza chain, but they sell all the favourite pizza toppings, garlic bread etc. Similar standard to Pizza Hut and slightly overpriced for pizza, but it's a good fill if you need a pizza fix!

I'm sure there are more that I've missed, but this covers the main choices!

International food

There are any number of Italian, French, British, American, Indian etc etc eateries around Bangkok and I won't even attempt to categorize them here! Wherever you stay, you'll more than likely have a few in your vicinity. The main concentration of European food is around the Silom and lower Sukhumvit areas. Great Japanese food is available on Soi Thaniya (Little Tokyo) just off Silom (near Pat Pong). This is also a great people watching spot, spend an hour in any of these Japanese eateries and you'll see a never ending procession of Japanese executives coming and going, some in groups, some alone. Some reading newspapers, some reading comics (!!). All with a mobile phone or IPhone glued to their ears!

Arab and Indian food is plentiful around Ploen Chit and Nana skytrain stations and surround Sois. I like Mrs Balbir's Indian restaurant, on Sukhumvit Soi 11/1 (Nana skytrain station). For a cracking pizza, try Bangkok Pizza on Sukhumvit Soi 26/1.

Fast Food

You can get your fix of KFC, McDonalds and Burger King all over Bangkok....enough said!

Upmarket eateries

If you fancy a splurge on upmarket eateries there is also plenty to choose from. For the location, try Vertigo on top of the Banyan Tree Hotel on Sathon Road (weather permitting of course!).

Baan Khanita (off Sukhumvit Soi 23) is an award winning Thai restaurant and La Normandie in the Oriental Hotel offers great food and great views of the Chao Phraya river.

There are many, many more but of course, I need to save up before I can afford to visit another!

Bad food experiences are rare in Bangkok, just be adventurous and don't just settle for the hotel room service option, get out and about and explore what's in your area. America's Favorite Restaurants Secret Recipes Revealed

What exactly are the secrets behind America's favorite restaurant recipes? Millions of people all over the country line up at the doors, waiting forever in long lines, just to experience the unique taste of these foods. Restaurants such as, Chili's, Applebee's, Red Lobster, Olive Garden, KFC, and even Burger King and McDonald's profit millions of dollars every day by giving America delicious meals they can't seem to find else where. The only real secret is how to use a combination of common ingredients, spices and herbs, and the method of cooking, in order to get the great taste.

Olive Garden's Bread Sticks for instance, what makes them different from other recipes we make at home? Most of the bread stick recipes we find in cookbooks suggest you lightly coat the dough with egg whites before baking. This gives a shining look to your bread sticks however; it does not add to flavor or help the bread sticks come out of the oven nice and soft. Other recipes suggest dusting the dough with garlic. Still, they are not the same as the one's we experience at Olive Garden.

To make Olive Garden Bread Sticks, use a loaf of frozen bread dough. Once it is thawed and soft, coat your hands with Pam Spray or oil and knead the dough. Form the dough into 8 to 10 logs. Let them rise in a warm place until doubled (1-1 ½ hours). Then lightly spray the dough with Pam Vegetable Spray. The secret behind the great taste is to take garlic powder and finely rubbed oregano and lightly powder the sticks. Preheat the oven to 375 and bake for only 20 to 25 minutes. For even softer bread sticks, place a pan of water in the oven while baking. This adds moisture and keeps your bread sticks from over browning and getting too hard.

What makes KFC Original Recipe Chicken so much better than the chicken we deep-fry at home? A side from the combination of common ingredients, the method of cooking it is what makes all the difference. Many people use regular deep fryers when making fried chicken. If you are attempting this with nice plump chicken breasts, the end result is a piece of chicken that is juicy deep inside next to the bone, but hard, crunchy, and over cooked on the outside. Using a pressurized deep fryer will make your chicken breast plump, juicy and delicious inside and out.

There are many ways to cook and make fabulous meals. Knowing the ingredient combinations, methods of cooking, and using the proper tools is what turns ordinary dishes into our favorite restaurant dishes.

Cupcake Toppings

When it comes to putting toppings on cupcakes, given their small size, attractive snacks are easily created; your guests, kids and family will appreciate the care and love that goes into baking. Candy is one of the easiest choices when selecting toppings for cupcakes. Colored sugars and sprinkles are always an attractive and delicious topping and it's something kids can help with as well. Once the cupcakes are iced, pouring the sugars and sprinkles in separate bowls allows for careful dipping, or not so careful, of the cupcakes. Another tasty topping can be larger candies such as gum drops or finely chopped up candy bars of various flavors.

To kind of shake things up a bit, adding flavors to frostings is a nice way to turn the ordinary into astonishing. Chocolate frosting with some coffee added becomes a scrumptious mocha topping. If it's St. Patrick's Day you are celebrating, green dye in the frosting with some mint flavoring will surprise your guests into having more. If it's a fall chocolate cupcake, orange frosting and some thin black licorice formed into the face of a jack o'lantern is sure to put a smile on the faces of some eager Halloween celebrants.

A festive alternative to your average cupcake could be like a Mardi gras King Cake. White cupcakes, filled with cream cheese or your favorite jelly, can be iced with yellow frosting and then sprinkled with purple and green sugars. Put them on a tray edged with sparkly beaded necklaces and chunky, in expensive costume jewelry and you have a Mardi gras party your guests won't soon forget.

Easter need not be a challenge when cupcakes are on the menu. Some colorful and creamy cupcakes in their holiday baskets will be a treat for everyone of whom you make a gift of these cheerful snacks. Frost some cupcakes with a nice pastel frosting such as pink, yellow, green or blue. On top of each cupcake, place some Easter candy such as Peeps, chocolate eggs or candy coated M&M's are decorations that enhance the delicious flavors that go along with the holiday.

For those who like to mix flavors, chocolate cupcakes are delicious iced with a peanut butter frosting with bits of peanuts or chocolate drizzled on the top. Use this same peanut butter frosting on a white cupcake filled with their favorite jelly to create something just for the kids. Another delightful combination can be orange flavored cupcakes iced with a pineapple-flavored frosting, sprinkled with coconut. If you're planning a bridal shower, how fun would it be to present to the party goers cupcakes topped with candy lollipop rings, available in any dime store candy aisle.

Topping a cupcake needn't be any harder than a walk down the candy aisle at your local grocery store, with the only limits in place being the smaller size of the cupcake and which delicious toppings to choose. For every occasion, there will be an attractive topping for a cupcake that is certain to cause your guests and loved one to delight in their beauty. Dare to imagine and remember, the sky's the limit when it comes to topping cupcakes.

Will the Audiobook Harry Potter Break New Records?

As far as top selling children's books go, the Harry Potter series of books are in great company. From Winnie The Pooh to Disney, to Nancy Drew to Roald Dahl. Plus a myriad of books in between as well. For many years up until the mid 1990's, some of these stories ruled the roost.

Once JK Rowling's series hit the shelves however, the children's book charts have known no equal. From 1997 until the present day, Harry Potter has been King! With over 300 millions book sales in the first 8 years, the kids book business has never been healthier. And there is no sign that these sales will wane.

Riding on the back of the book sales, Audiobook Harry Potter is also making great strides. Based purely on the popularity of the books themselves, the audio book will make great sales, but are they worthy of this amount of attention in their own right?

From my personal opinion, I am an audiobook convert. The reason for this in my case was because I was completely incapacitated and had to lie completely still, so was very limited in ways that I could keep myself entertained. I also couldn't see very well, so was bitten by boredom as much as anything else. The audiobook series were a boon to me, because they offered me many hours of distraction, that didn't involve me doing anything, other than sitting and listening. It was also company as well, so audio books are a great source of comfort to those who are confined to their beds.

What was more surprising was that finding myself in this situation, I actually enjoyed the quality of the reading. Some nuances in the stories suddenly became clear through the expertise of the actor delivering the dialogue. I am sure that many will get great joy from Harry Potter delivered in audio format.

Kid Friendly Recipes

Kid friendly recipes like Asian Stir-Fry with Rotisserie Chicken or BBQ Chicken Sandwiches are quick and easy. Kids love the taste of these dishes. Moms will love the convenience.

Rotisserie chicken is a healthy ingredient for kid friendly meals. Use the ready-to-eat rotisserie chicken available in most grocery stores.

Chicken preparation: To Cut up the chicken, use kitchen scissors. Cut the chicken in half along the breast and backbones. Cut each half between thigh and wing. Pull the chicken off the bones and chop into small pieces.

BBQ Chicken Sandwiches

This recipe is made with off the shelf ingredients. Use bottled barbecue sauce, a few seasonings and a rotisserie chicken to make this fast family dinner. You can purchase potato salad or coleslaw from the grocer also to round out the meal.

Ingredients


1 bottle barbecue sauce

1 tablespoon chopped fresh parsley

1/2-teaspoon cumin

1/2-teaspoon chili powder

1 rotisserie chicken about 1-1/2 lbs.

Remove the skin and bones

4 Kaiser rolls, split

Instructions:

1. Combine barbecue sauce, parley, cumin and chili power in skillet over low heat

2. Stir in chicken

3. Stir occasionally until heated through

4. Divide chicken mixture among the rolls

Serve with potato salad, coleslaw and pickles if desired.

Yield: 4 servings

Asian Stir-Fry with Rotisserie Chicken

Made with ramen noodles, fresh ginger, garlic and cilantro This is a quick dinner for busy cooks who want to create a delicious but nutritious 15-minute meal.

Ingredients:

1 tablespoon olive oil

1 chopped onion

1 tablespoon minced and peeled fresh ginger

1 clove garlic

1 pkg. frozen mixed vegetables

1/4-cup lite soy sauce

1-1/2 teaspoon cornstarch

2 pkgs. ramen noodles

1 rotisserie chicken with skin removed and meat shredded

1 tablespoon chopped fresh cilantro

Instructions:

In small bowl stir together soy sauce and cornstarch until smooth.
(Discard or save flavor packets from ramen noodle packages for another use)

1) Heat olive oil over medium-high heat

2) Add onion, ginger and garlic

3) Cook until onion is tender

4) Stir in vegetables

5) Cook 3 minutes

6) To the skillet add 2 cups water, bring to boil

7) Stir in soy sauce mixture

8) Boil until just thickened

9) Stir in noodles and chicken

10) Cook stirring occasionally until noodles are tender and chicken is heated through

11) Transfer to platter

12) Sprinkle with cilantro

Prepare to Cook Tasty Quick Meals

Introduction

In this day and age, folks are "flying." Some get home from work all tired out and have no one to cook for them. Old folks are light eaters, except for some fat old men like. We want something fast and easy even if we have to cook it ourselves. And we want it to taste good.

My wife does some of the cooking at our house but she notified me on my retirement that she was no longer the cook because she was retiring. I though she was kidding. I do most of the cooking. Well, I have always liked to cook because when I was a little kid my mother taught me to cook and she made it fun. We usually cooked beans and fed the hobos hot bread and beans when they came to the back door.

One time when nobody was home, I decided to cook donuts. My mother came home to a very messy kitchen which she had to clean up. Then she told me how to make real donuts. It was the deep-frying thing that I didn't understand. Did I get scolded for trying to cook donuts. Never! That would have hampered my education.

Here are some hints for preparing good meals in a hurry:

1. Stock Up on Some Goods

It's awful at 10:00 o'clock at night to try to fix something to eat and there is nothing in the cabinet. Keep some things on hand.

I buy most everything in case lots. Our store has a case-lot sale every year, but we can buy anything by the case at any time. I save money that way. For example, I get a buck-a-box off my wife's favorite cereal.

Here is what I stock: canned vegetables and fruits, mushrooms, cooking soups like cream of mushroom and cream of celery, ready-to-eat-soups which I adulterate, chicken broth, cake mixes and frosting because my grandkids expect a cake each and every Sunday, and canned beef, chicken, turkey and tuna. With these items on hand, I can cook up a lot of good basic meals.
I forgot. I also buy canned gravy by the case, beef, chicken or turkey, and pork.

Other things I keep on hand are stewed tomatoes, enchilada sauce, Chinese vegetables. tomato paste, olives because my wife loves them, and noodles for lasagna plus spaghetti and country noodles for chicken and dumpling soup. I also keep a few roles of dough in the refrigerator including cinnamon role dough. And don't for get the tortillas. I like the corn variety. Oh, you will need rice, onions, and garlic, and a collection of spices.

2. Make Quick Soups

Some folks think that you have to cook rice first. That you must keep it under lid for 20 minutes or a gremlin will come out of the earth and eat you up. All you really need to know about rice is that you need at least twice as much liquid as rice and that you have to cook it for 20 minutes any which way you want. You don't have to cook rice before adding the good stuff. Add your onions, garlic, meat, vegetables, soups, gravies, or whatever, and cook it in a frying pan or in a pot. You can make some wonderful dishes without even trying. My wife likes me to stir in some shredded cheese at the end of the process.
Soups are easy.

Chicken and Dumplings
You can take a couple of cans of chicken noodle soup but you won't necessarily like it. It depends on the brand of soup. I suggest that you boil country noodles in chicken broth and cream of celery soup, drop in a can of chicken or turkey meat-don't forget the mushrooms-how about a can of carrots? When it is boiling, drop bits of croissant dough on the top. Keep it boiling under lid for 20 minutes. Wow! You have chicken and dumplings.

Cheese Soups
I keep cheese around the house. It is my wife's favorite food. Start with any canned cream soup. Drop in some carrots. Grate the cheese and stir it in. Season to taste. Yum!

Cream of Potato Soup
I use canned potatoes slices and canned carrots because it is so fast. Drop in a can of cream of celery soup, a can of mushrooms and you are done. Okay, add some onion and garlic. Do you like Chinese vegetables? Drop in a can.

Chowders
I use canned or frozen crab meat or clams, maybe shrimp. I simply put them in creamed soup, maybe add canned carrots or canned sliced potatoes, add grated cheese. That's it! Oh, yes. Don't for get the Old Bay® seasoning.

3. Make Quick Mexican Food

Enchiladas or Tacos
Take some canned meat such as chicken, beef, pork or turkey, toss in a chunk of garlic, some onion, and simmer it in a frying pan. Okay, use leftover meat. Grab a few tortillas. You can quickly soften them by putting them in a frying pan with a little oil. I just put them in the microwave for a few seconds. Roll the meat mixture into the tortillas. Now, just pour a bit of hot enchilada sauce over the top. Now that didn't take long, did it. My wife likes me to toss in chopped olives. Place shredded cheese on top of the enchiladas and melt the cheese in the oven, in a fry pan, or just toss the enchiladas into the microwave for a minute.

If you want tacos, just put the meat mixture into the tortillas and add a bit of chopped lettuce and tomato. Don't for get the cheese. Yes, you can put some salsa on top. Avocados? Why not?

Rice and Beans
You need rice and beans with those enchiladas. I use canned refried beans of the low-fat variety or lintel beans or such. To make Spanish rice just cook your rice in chicken broth for twenty minutes with the good stuff already in it. I add onion, green tomatoes from my garden, garlic, and such. You decide. I like green chilies either fresh or from the can.

Mexican Soup
Make any soup and add enchilada sauce and green chilies. Aye! Aye! Aye, Aye! Did you add hot peppers?

4. Make These Quick Meals

Chef Salad
Chop up part of a head of lettuce. Add some chopped onion. Cube some ham and some cheese. Drop those in. Add some croutons-not the hard kind that break your teeth. Mix in your favorite dressing. That's it. Well, I like toast too. This is a good time to mix orange juice with lemon-lime pop. It makes a nice drink.

Hot Roast Beef or Turkey Sandwich
Toast some bread. I like mine buttered. Place meat from a can or a package or leftover meat on the toast. You may want to quickly heat the meat in a fry pan or in the microwave. Pour hot canned gravy over the mixture. Slice some tomatoes from your garden if you've got them. You can buy chicken-ala-king by the can. You simply pour that over the toast-yes, heat it first.

Rice Dishes
Some folks think that you have to cook rice first. That you must keep it under lid for 20 minutes or a gremlin will come out of the earth and eat you up. All you really need to know about rice is that you need at least twice as much liquid as rice and that you have to cook it for 20 minutes any which way you want. You don't have to cook rice before adding the good stuff. Add your onions, garlic, meat, vegetables, soups, gravies, or whatever, and cook it in a frying pan or in a pot. You can make some wonderful dishes without even trying. My wife likes me to stir in some shredded cheese at the end of the process.

5. Spaghetti

I love spaghetti. My wife won't eat tomatoes very often, so I often cut up green tomatoes which she can't recognize as a tomato. The other day I saw some wonderful fresh Italian sausage in the local grocery. I couldn't resist it. I bought the mild variety because I am chicken. It had some tiny hot spots so I did get the gist of the hot stuff.

First I baked the sausage at 350oF for 40 minutes while I watched the football game. I then fried garlic and basil, and onions and green tomatoes, and added the sausage. My wife took the good stuff from the bottom of the dish I cooked the sausage in and added it to my sauce. Finally, I added canned beef gravy to make the sauce. I added apple juice. I boiled the spaghetti, drained it and coated it with butter and Parmesan cheese, and we were ready to eat.

I always season spaghetti with basil. I never add oregano. Many Italians stay away from that stuff. One thing that could help the sauce is cooking wine. We don't have wine at our house so I added apple juice to the sauce. Wow, that spaghetti was good.

I like spaghetti sauce with tomatoes and tomato paste, even stewed tomatoes or Italian stewed tomatoes, but I don't make such very often because of my wife. She likes spaghetti noodles with just butter. That is what she has to eat when I make regular spaghetti and her temptation is not overcome by my sauce. Lasagna is just layers of freshly boiled lasagna noodles with cheese and spaghetti sauce (meat in the sauce) in between. You have to bake it. Put cheese on top, preferable at the end of the bake. No, I'm not much for Spinach Lasagna or Eggplant Parmesan.

Hypoglycemia - First The Truck Hits You, Then You Pass Out

Most of us know that our bodies create insulin to handle the sugary treats we eat. And most of us know we get diabetes if our insulin can't get the job done.

What few of us know is what happens when insulin does its job too well. It's hypoglycemia, low blood sugar, and it's the pits. I've been there and done that, and there's nothing I can say to recommend it.

Here's what happens: You eat some kind of starch, which your body converts to sugar. Your pancreas says, "You want insulin, do ya? Well, take this!" and dumps out way more insulin than you need.

At first, you feel fine. Maybe even get a little energy boost from what you ate. An hour or so later, though, you feel like a truck hit you. Tired like you can't believe. Brain asleep for the duration. Feeling as energetic as a wet noodle. To top it all off, you may even pass out. And the wipe-out lasts for six to eight hours.

What causes hypoglycemia?
• A high-carb diet-lots of bread, pasta, bagels, desserts-a pretty standard diet nowadays
• Vitamin and mineral deficiencies. Not giving our bodies the ammunition they need to fight the good fight takes us down a lot of dead ends, including hypoglycemia.
• Alcohol. Our bodies see alcohol as a poison-and a high-carb poison at that.
• Prescription drugs such as those given to treat infections.
• But most of all, endocrine problems. If your thyroid and/or adrenal glands get in a tizzy, you're kind of a sitting duck. That's how I ended up in hypoglycemic hell.

Testing for hypoglycemia:
Diagnosis comes via a fasting-blood-sugar test. First thing in the morning, after fasting for at least twelve hours, you give a blood sample, then chug down a big glass of what tasted to me like some vile kind of syrup. Then for the next four or six hours, depending on the test ordered, you give regular blood samples so they can track your body's reaction.

Normal blood fasting blood sugar ranges from 80 to 100, although they're monkeying around with the numbers of late. My blood sugar, at its lowest, was 46, so it's no wonder I slept through the whole thing. They roused me enough to stick my arm out for another blood taking as needed, but I don't think World War III could have awakened me.

Fixing hypoglycemia:
• Give up simple carbohydrates and limit all carbohydrates. My doctor put me on a diet of no more than 20 grams of carbohydrate a day-about half a peach, as I remember, if you want to blow the limit all at once.
• Start (or continue) treatment for your thyroid and adrenals.
• Start a good vitamin/mineral program for yourself. The endocrine system pretty much controls what happens in your body, and it's a nutrition hog. Most vitamins and minerals have specific functions in the endocrine system, and you need to help all of that happen.
• Don't fight yourself. Do what you can and get plenty of rest.

A warning:
Some doctors treat hypoglycemia with a recommendation that you eat and drink carbs to "give your body what it needs." Run-do not walk-away from advice like that. Simply put, it's wrong, and guaranteed to make things worse.

Every time your body reacts with too much insulin is a "hypoglycemic event." Research strongly suggests that each hypoglycemic event-which this misguided advice will cause-brings you closer to diabetes, aka hyperglycemia, and all its complications.

Don't go there.

Easy Lasagna Roll-Ups and They Are Diabetic Friendly

For something a little different try this easy recipe for tasty Lasagna Roll-ups. It's quick and easy and combines many healthy items into one dish. The lasagna provides grain (even a better grain value if you use whole-wheat lasagna), the ground beef provides the meat, spinach adds a healthy vegetable, of course the tomatoes in the sauce are well known to be excellent in reducing one's cancer risk, and three kinds of cheeses add dairy to the mix. This would make a great addition to your recipe file.

LASAGNA ROLL-UPS
4 lasagna noodles
1/2 lb. lean ground beef
1 small onion, chopped
1 box frozen spinach, thawed and drained well
8 oz reduced-fat ricotta cheese
1 egg, beaten
1 tsp low-fat milk
1/2 tsp thyme
1/4 tsp salt, optional
2 cups sugar-free spaghetti sauce without meat, divided
1/4 cup shredded Parmesan cheese

Cook noodles according to package directions; rinse and drain. In a medium non-stick skillet, cook ground beef and onion until beef is no longer pink. Drain in a colander and rinse with hot water to remove excess fat. Rinse pan and wipe with a paper towel. Add the spinach, ricotta cheese, egg, milk, thyme and salt, if using, to the ground beef. Mix up well and divide evenly, spreading over the lasagna noodles. Pour 1/4 cup spaghetti sauce over the meat mixture of each noodle. Carefully roll up jelly-roll style and place seam side down in an 8-inch square baking dish that has been sprayed with non-stick vegetable oil spray. Pour the remaining cup of spaghetti sauce over the noodles. Cover and bake for 45-50 minutes until heated through. Sprinkle with the Parmesan cheese.

4 servings: Each contains approximately 350 calories, 33 g carbs and 23 g protein

Note: You can use lean ground turkey instead of the beef, if you prefer poultry over red meat.

Famous Romanian Food - Love At First Sight

Romanians really enjoy eating. They like to have a full table with every type of goodies, especially for the holidays. Nowadays, nutritionists recommend us to eat healthy food, meaning many raw vegetables and fruits, which are specific to the area where we live and according to the ongoing season.

Romanians know what healthy food means, but that does not mean they give up their famous food. Romanians have special traditional food. As in every country, there are different regions with different original famous specific food.

For example, in Transylvania, to prepare the traditional Sunday meal, housewives get a fat chicken from the household, pick the feathers and cook a noodle soup, but not any type of noodles. They make those noodles, as well as the rest of the food at home. That soup is part of the Romanian famous food list.

There are some types of famous Romanian foods, which have been borrowed from the Austrians, for example the schnitzel prepared with fried potatoes. That specialty is cooked after coming back from church, because Romanians have a tradition in this field too, as many others do. They always go to church on Sunday. As a proof, the schnitzel ritual is still kept today all over Transylvania. Of course, this all comes with good quality wine and homemade palinca (a strong beverage made of grapes or prunes).

For dessert, women usually bake special cookies and all sort of pies. The most famous of them are the pies and the cookies made with nuts cream or vanilla, baked, of course, in the oven of the wood stove. Romanians also have a tradition in baking homemade bread in a special earth made oven.

That is one of the traditional famous Romanian food specialties. The huge fluffy bread was, and still is made with potatoes and wheat flour, and all the ingredients used for baking it are natural. Everybody should taste this type of bread, because it is very tasty, the crust is very crunchy and the taste is special.

Whether there are special original traditional famous Romanian food specialties, or some borrowed influences, the variety of the cooking department is huge. No matter what we are talking about, all the results can be categorized as tasty.

Many people choose their food today being influenced by the colours of the wrappings or the colour of the food itself. Unfortunately, there are generations, which do not know the taste of a garden grown tomato, or the taste of a chicken grown up on corn.

Romanians can still afford to be conservative about the culinary art. Of course, not all of the Romanians cook at home and they do not always eat traditional famous food. There are people, who have got used to eating ready-made food, and they just heat it in the microwave oven.

However, the traditional world famous Romanian food is something that each individual should try. It is impossible not to like the famous "sarmale", (cabbage rolls), or the different soups and "ciorba", (broth), cooked according to special Romanian recipes.

How To Make A Famous Crab Louis Salad

You can serve a Crab Louis salad as an appetizer or as an entree, depending on your appetite. The following recipe makes enough to serve four people as an entree. It takes a bit of effort to make but the results are worth it. This salad, which is also known as The King of Salads or a Crab Louie salad, dates back to the early twentieth century and it started out on the west coast of the United States.

The exact origin of this recipe is not known but it was being served in 1904 in Solari's, a San Francisco restaurant. There is a recipe for it in a 1910 cookbook. Some people believe that the founder of the Davenport Hotel in Spokane, Washington, Louis Davenport, created the dish. He lived in San Francisco for a long time before relocating to Spokane Falls and he would import the finest seafood from Seattle to offer to guests in his hotel.

The popularity of this dish might not be the same now as it was in the early days of the 1900s but you can still find it on some west coast hotel and restaurant menus including the Davenport Hotel and the Palace Hotel in San Francisco and, of course, you can make it yourself at home.

Crab Louis Salad Ingredients

Dungeness crab is best for making this recipe, since that was the one, which featured in the original dish, but you can use any kind. The dressing is delicious when freshly made, although you could substitute Thousand Island dressing if you are in a rush. If you are making this for a dinner party, you should make your own because the difference will be noticeable.

In addition to the seafood, this salad typically consists of hard-boiled eggs, asparagus, cucumber, tomato and romaine lettuce, but green onions, capers or olives appear in some versions of this recipe. As with many salad recipes, you can adapt this one, leaving out any ingredients you do not like or cannot get.

What You Will Need:


2 hard-boiled eggs, in wedges
1 romaine lettuce
12 very fine slices cucumber
4 chopped cooked spears asparagus
2 tomatoes, in wedges
1 lemon, in wedges
1 lb fresh crab meat or 3 cans
1/4 teaspoon paprika
For The Dressing:


1/4 cup finely chopped green bell pepper
1/4 cup finely chopped green onion
1 teaspoon prepared horseradish
1/2 cup mayonnaise
1/4 cup whipped cream
Few drops Worcestershire sauce
1/2 teaspoon lemon juice
1 tablespoon milk
2 tablespoons chili sauce
How To Make It:

Reserve four lettuce leaves and tear the remaining ones into small pieces. Put one whole lettuce leaf on each of four medium sized plates. Top them with the torn lettuce. Keep four big pieces of crab meat and flake the remaining crab. Arrange the flaked crab on the lettuce with the asparagus, cucumber, eggs, and tomatoes.

Combine the dressing ingredients and drizzle the dressing over the top. Garnish the salads with the reserved seafood and the lemon wedges. Sprinkle paprika over the top and serve immediately.

Campfire Cooking in the Open Air

This can be done in several ways - buying a camp stove, kerosene, matches and all the rest or going the boy scout way and starting from scratch , building a fireplaces from stones, collecting kindling and wood and making fire. Fire pits, troughs and charcoal are other ways. Whichever way you choose you will need pots, heavy duty foil or a spit and something to support them. For large groups lay out charcoal in a long trough. Make a trough above ground by placing two rows of metal tent stakes every few feet with their tops about 5" above the ground. String metal wire between them, then form a trough with heavy duty foil, folding it over both wires.

Mankind has been cooking in the open air since pre-history - though nowadays you may have to make sure that you are in an areas where cooking fires are allowed and there is no danger of forest fires. It should go without saying that when clearing up you should ensure that there is no possibility of the fire re-breaking out and the area should look as near as possible as if you had never being there.

Foil Parcels - if heavy duty foil is not available use double layers of normal foil. Pack vegetables such as potatoes and onions into buttered foil packets and place in hot ashes or above a trough of charcoal You can do the same with fruit. Double seal the parcels by folding over ends and then repeating this. If you feel it necessary you can scratch the name of the contents onto the foil before cooking.

Lemon Chicken

One chicken joint per person, brushed with melted butter and having a squeeze of lemon on top. Place on buttered heavy duty foil. Add some lemon slices and herbs of your choice to the parcel. Seal and cook for about 40 minutes.

Ham Parcels

These make a meal in one packet. Cubed ham and potatoes with pineapple and sliced onions. You could replace the pineapple with some grated cheese. Just place enough for each person in individual parcels and cook for about 30 minutes.

Baked Stuffed Potatoes.

Rub one cleaned potato per person with oil to give a crispy skin. Split the potatoes and place a sausage and some relish in the split. Place in buttered heavy duty foil and make sealed parcels. These will take at least an hour - a little longer if the potatoes are large ones.

Pop Corn

In the center of a square of heavy or doubled foil. It needed to be at least 18 inches square. Place one teaspoon of oil and one tablespoon of popcorn. Bring foil corners together to make a pouch. Seal the edges by folding, but allow room for the popcorn to pop. It is easiest if you then tie each pouch to a long stick with a string and hold the pouch over the hot coals. Shake well until all the corn has popped. Open your parcel and top with butter, chocolate, peanut butter or a mix of butter and brown sugar.

Corned Beef Dinner

Put a few thick slices of corned beef in the centre of your foil square. Top these with thinnish slices of potatoes, carrots, onions and anything else in the way of vegetables available.Coil up the sides of the foil before adding a couple of table spoons of water in which a little beef stock cube has been dissolved. Seal and then this can be placed in hot embers and cooked for about 40 minutes.

How to Choose Good Books

Good books show their standing through high sales figures and high search figures on the internet. The 5 most popular categories based on these criteria (in descending order of importance) are Children's books, Management books, Fiction books, Books on Business and, Sales books.  

Children's books are a popular choice as gifts. They are valuable as they help develop the child's reasoning and imaginative abilities and expand his/her vocabulary. They also aid in instilling sound moral values.  

But choosing the right book for a specific child can be a challenge and the following guidelines should help.  

Children can be grouped into categories according to their approximate age and a useful grouping is that of preschool, junior school, high school and young adults. This broad grouping should allow the preliminary elimination of certain books.  

Next, any book with sensitive content can be eliminated. This would include all books which would not be in line with the family's values e.g. those which promote a specific religious point of view and those which require maturity to handle such as gratuitous violence and sexuality.  

The gender of the child will further eliminate additional types of books.  

Management books relate to the effective and efficient activities involved in the operation of a business. They cover the common activities of  Business Intelligence Management, Financial Management, Human Resource Management, Information Technology Management, Marketing Management, Production Management, Service Management and, Strategic Management,  

It should be noted that most of the books are either heavily skewed towards theory, which makes it difficult to put their content directly into practice, or are based on case studies of organisations which were successful in the past.  

Case-study based books are also normally those which make the bestseller lists but suffer from two basic defects. Firstly, their content reflects the author's definition of success and success factors. Secondly, they use the past to suggest future "success" managerial actions. These two defects are reflected in the fact that the majority of these so-called successful companies used as examples are usually no longer so successful when looked at today. Further, that the application of these identified "success" factors in similar organisations rarely result in the required improvement.  

Management books are nevertheless important and serve a valuable function as long as the reader realises that their content has to be adapted to his/her unique situation and uses their content as broad guidelines.

Fiction books are those which feature invented stories and consist of the following sub-categories:  


Horror fiction whose aim is to frighten the reader by exploiting his/her conscious and/or unconscious fears. The best known authors are Stephen King, Dean Koontz and Clive Barker.  
Mystery fiction which are usually based on a main character trying to solve a crime. It has three sub-categories which are crime, detective and spy. Successful authors in this category are John Sandford, Michael Connolly, Robert B Parker, Sue Grafton, Kathy Reichs and James Lee Burke.  
Romance fiction which usually feature a lover having to overcome great hurdles to be with the love of his life. Authors in this category are Danielle Steele, Barbara Cartland and Daphne Du Maurier.  
Science fiction/Fantasy books which have stories set in imaginary worlds using advanced technologies. This category has increased in popularity due to films such as Star Wars, Star Trek and, more recently, The Matrix and successful authors include J.K. Rowling, Arthur C. Clark, Ray Bradbury and J.R.R. Tolkien. 
Suspense/Thriller fiction which commonly features a character exposed to constant threat whilst up against a villain. The best known authors in this category are Clive Cussler, Lawrence Sanders, Frederick Forsythe, Richard North Patterson and Tom Clancy.  
Western fiction about life on the American frontier. Louis Lamour is the best known author of western fiction.  
Woman's fiction which tends to focus on relationships. They usually feature a strong woman character that triumphs in extremely difficult circumstances. Authors in this category are Judith Krantz, Rebecca Wells and Barbara Taylor Bradford.

Books on Business are distinguished from Management books in that they are slightly more of an academic nature and cover subjects which are universal  Common recent examples of these are ethics, organisational structuring, the state of the world markets and international financing. 

A predicted future factor whose implications will have to be catered for by all organisations is the growing counter-reaction to "Human rights" in the form of "Human responsibilities" for which a Universal Declaration has already been formulated by the InterAction Council of Political and Religious Leaders.

On a local level they also include all the books related to the legalities of running a business which are published by all relevant authorities.

Sales books cover the spectrum from organizing and managing a sales team to sales skills and are especially popular during economic downturns.  

An important distinction must be made between the sales activities required when selling an object and when selling a service as it is apparent that there are two totally distinctive skill sets and procedures involved. Would you trust your friendly local car salesperson to obtain and administer your personal financial investments?  

Despite this obvious difference many authors tend to adopt a "one size fits all" approach to sales and then e.g. advocate the use of their developed "closing techniques" for all sales types.  

Interesting enough when you go back in history you will find that the common sales approach underlying most of the sales models today was developed for pharmaceutical representatives in the past whose job it was to deduct stock level quantities on a pharmacy shelf from their recommended levels and then to replace the sold numbers of items.  

A single approach to both types of sales is doomed to failure and this must be kept in mind when buying sales books.  

Used books or second-hand books vs new books: In the past buying used or second-hand books tended to have a stigma attached to it and it was not the "done thing". However, if you consider that the only difference between a good quality used book and a new book is the price then it is obvious why these types of stores have mushroomed.  

Besides the cost savings, which allow you to buy even more books, an avid reader could use the opportunity to browse the store, whether it is a physical or virtual store, and thereby identify other books by his/her favourite authors. It is also a chance to become acquainted with new authors or new characters by current favourite authors.  

 It also allows you to buy those books which have been out of print.  

Books on sale. If you still choose to buy new books then it is wise to continuously keep an eye out for sales held by the larger bookstores during which they sell new stock at a lower price. This is usually when their sales projections have not been realised and they are left with excess stock. You can either physically visit their stores, or visit their websites, on a regular basis to find out when they are having sales.
